Pecan Caramel Bites
A sweet and delicious dessert that will appease your sweet tooth cravings without any of the guilt!
Preheat oven to 350°F (180°C) and line a baking sheet with parchment paper. Also line a mini muffin tin with 24 mini muffin cups.
Place the pecans on the prepared sheet and roast in preheated oven for 5 minutes
In a medium saucepan over low heat, whisk together the nut butter and agave or honey to make a smooth paste. Remove from heat.
Stir in vanilla, salt and roasted pecans using a spoon.
Spoon the mixture evenly into the mini muffin cups, making sure to leave enough space for the chocolate topping.
Place the muffin tin in the freezer while you prepare the chocolate.
In a double boiler, slowly heat the chocolate and the milk, stirring frequently, until the chocolate is melted.
With a spoon, drop a dollop of ganache on top of each caramel cup
Place in freezer for 2 hours until firm.
Store in the freezer in an airtight container.
