Strawberry-Banana Ice Cream
A vegan ice cream made in about 10 minutes, with four ingredients? It is possible! The secret is... frozen bananas! It's also great way to use up your overripe bananas. And who doesn't love ice cream, either on its own or sandwiched between two soft homemade cookies? Add your favourite ingredients to mix up the flavours. Banana goes great with cacao, nut and peanut butters, matcha, chocolate chips and coconut. In this recipe, feel free to replace the almond milk with coconut milk for an even creamier version. This simple and healthy choice is a refreshing way to brighten up a hot summer day, and the kids will love it!
3 frozen bananas
2 cups frozen strawberries (or the fruit of your choice)
2 tbsp almond milk
1/2 tsp vanilla extract
Mix all the ingredients together in a food processor until it reaches a sorbet-like consistency.
Transfer the mix to a rectangular pan.
Freeze for at least 3 hours.
