2 servings + extra dressing
Here is a fresh and simple salad recipe to make! The UMAMI salad dressing mix will add a touch of flavor and texture. In addition it contains 8 essential nutrients and is a gluten-free alternative to croutons.
1/4 cup nutritional yeast
3 tbsp extra virgin olive oil
2 tbsp apple cider vinegar
2 tbsp water
2 garlic cloves, grated or very finely minced
1 tbsp PRANA Organic maple syrup
1 tbsp tamari
Pepper, to taste
2 big handfuls of arugula
1/2 cup chopped strawberries
1/2 cup sliced and halved cucumbers
2 heaping tbsp pickled red onions
Pepper, as garnish
1/4 cup PRANA Umami Salad Topper
Dressing – makes extra
Prepare the dressing by adding all of its ingredients into a mason jar. Close the lid and shake until well mixed.
Taste and adjust seasonings, if desired, by adding more apple cider vinegar for acidity, more maple syrup for sweetness or more tamari for saltiness. Set aside.
Divide the arugula, strawberries, cucumber and pickled onions between two plates and drizzle 2-4 tablespoons of dressing on top of the salad. Toss to combine then garnish with PRANA’s Umami Salad Topper and freshly cracked pepper. Enjoy immediately :)
