This recipe is quick and easy. Gluten-free and nutritious, these squares are packed with superfoods including chia seeds, hemp seeds, and raw cacao powder. They make a fantastic dessert or afternoon snack for both kids and adults.
1 cup puffed quinoa
2 cups crunchy puffed rice
⅓ cup PRANA organic raw cacao powder
⅓ cup PRANA organic finely grated coconut
2 tbsp PRANA organic whole black ProactivChia seeds
2 tbsp PRANA organic shelled hemp seeds
1 pinch of sea salt
¾ cup PRANA organic coconut oil (reserve 1 tsp for baking pan)
4 tbsp maple syrup
1 tsp vanilla extract
In a large bowl, mix dry ingredients (puffed quinoa, puffed rice, cocoa, coconut, ProactivChia, hemp and sea salt).
In a saucepan over low heat, melt coconut oil, then add in maple syrup and vanilla extract. Stir for a few seconds and remove from heat.
Add liquid ingredients to dry ingredients, then mix to combine with a spatula.
Lightly grease an 8-inch (20 cm) square pan with reserved coconut oil. Pour mixture into greased pan and press in to an even thickness. Cover with plastic wrap and refrigerate 45 minutes to 1 hour
Once chilled, cut into 9 squares.
These squares will keep covered in the fridge.
