Fig, Date and Walnut Cookie
These gluten-free cookies are absolutely decadent.
1/3 cup almond milk
6 PRANA organic Medjool dates, pitted
3 PRANA organic figs
1 tbsp PRANA raw lucuma powder
2 cups PRANA organic raw European almonds, ground to a flour
1 tsp organic fair trade ground Ceylon true cinnamon
1 pinch sea salt
2 tbsp maple syrup
1/4 cup PRANA organic raw walnuts
1 tbsp PRANA organic whole sesame seeds
Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
Chop the dates and figs into small pieces.
In a blender, combine the almond milk, almond flour, lucuma, cinnamon, salt and maple syrup. Blend until smooth.
Add the dried fruits and walnuts. Mix well.
Spoon ping-pong size balls of dough on the prepared baking sheet, about 1" apart. Lightly flatten the balls and sprinkle with sesame seeds.
Place in preheated oven and bake for 15 minutes or until nice and golden.
Remove from oven and let cool.
